Recipe Preparation
Soak gelatin in ½ cup cold water in a small bowl 10 minutes.
Meanwhile, stir vodka, lemon juice, simple syrup, Campari, bitters, and 1¼ cups blood orange juice in a large measuring glass.
Heat gelatin mixture and remaining ½ cup blood orange juice in a small saucepan over low, stirring to dissolve gelatin; add to vodka mixture. Strain into 2-oz. plastic cups; chill until set, at least 6 hours and up to 5 days.

Blood Orange Mimosa Jello Shots
These are inspired by Jaymee Sire, the brilliant blogger behind e is for eat. See her post. We used tangerines because they are easier to find than real blood oranges, and made the prettiest cups. But you could also use navel oranges or actual blood oranges with great results. The cups will just be slightly more difficult to clean out. Adjust food coloring amount accordingly.
TOTAL TIME: 4 hours, 30 minutes
5 tangerines (including the 1 cup of fresh tangerine juice you’ll get from them)
1.5 packets unflavored Knox gelatin
3/4 cup champagne or sparkling wine
1/4 cup orange liqueur like Triple Sec or Grand Marnier
2-4 drops red food coloring
Slice tangerines crosswise. Using a reamer or electric juicer, juice the tangerines. Strain the juice until you have 1 cup. (If you don’t have enough juice, just add some store-bought orange juice.) Carefully flip the rind inside out and peel the fruit away from the pith (can use a paring knife to make this less messy) to make a clean "cup." Set tangerine cups in cups of a muffin pan.
To make filling: Pour juice into small saucepan and sprinkle with gelatin and sugar. Allow gelatin to soak for about two minutes. Heat over medium, stirring occasionally, until the sugar and gelatin are both dissolved. Let mixture cool to warm. Add champagne and Triple Sec. Add red food coloring until you like the color. Transfer to a container with a spout.
Pour mixture into tangerine cups. Allow to set several hours or overnight.
Turn tangerine cups out onto a cutting board, Jell-O side down. Using a serrated knife, cut each tangerine in half lengthwise and serve.

I've been so excited to share this recipe with you! But first, can we just take a moment to say ohmygosh I can't believe Christmas has already come and gone.
How has the entire year already flown by??
We had a really great Christmas with my family in North Carolina. It took us all day to work our way through the pile of gifts, the food was incredible, and the day was filled with lots of laughter and love. We relished in every single moment watching Emma as she (for the first year) started to really understand the concept of Santa, gift giving, and (obviously) gift getting. We went overboard on her gifts this year, no question about it, but it has been so much fun watching her gleefully run around with new toys.
I know, I know– I'm just talking about the toys and presents. I know there's more to Christmas, and I should be focusing on that. But I just can't wipe the grin off my face when I see her sitting at her new vanity curling her hair and applying pretend lipstick. Or when she runs around with her new camera shouting “SAY CHEEEEEEEEEEEEESE!” Or when I hear her speaking in a high squeaky voice as she pretends the Cinderella lego-person is having a conversation with the Ariel lego-person.
It's just so sweet my heart feels like it's going to explode.
But all good things must come to an end, I suppose. And now it's time to transition into the New Year. Which means it's almost time to start cleaning out her room of old and ragged toys, taking down the Christmas decorations, and making salad my new favorite food (boo)!
Fortunately, the cosmic universe (well… the calendar year, actually) gives us a buffer week in between the most gluttonous day of the year and the least. And we get to use this week to finish up the holiday food leftovers and plan for one last awesome celebration: New Years Eve!
We don't drink, but I've always loved the look of champagne jello shots. They just look so pretty and sparkly, and I've been meaning to get around to making a non-alcoholic sparkling cider version forever!
These are so fun and just as beautiful as the champagne jello shots, but these can be enjoyed by the entire family! You can use any flavor of sparkling cider (or even a combination of half juice and half carbonated water) and add berries or cherries for a fancy look! You could even add gummies for a less-fancy and more kid-friendly feel!!
I used White Grape Sparkling Juice and blackberries for a more “adult” and sophisticated look and taste, but there are so many variations you could create. And, of course, think outside the glass! I was going for fancy-looking, so I poured them into these stemmed glasses. But you could pour the jello into small jars or even cut them into cubes!

Ingredients
2 envelopes (6 oz each) SVEDKA Unflavored Gelatin Mix
.25 cup canned sweetened condensed milk
2-3 drops yellow food coloring
.75 cup SVEDKA Vodka, divided
1 cup orange soda
1 cup thawed whipped topping

Instructions
Add 1 cup boiling water to one package of unflavored gelatin mix in a small bowl and stir until completely dissolved. Add sweetened condensed milk, a couple drops of yellow food coloring and .25 cup of vodka. Pour into 18 (2 oz) plastic cups that have been sprayed with cooking spray, using about 2 Tbsps. per cup. Refrigerate 30 to 45 min until firm, but still slightly tacky.
Heat orange soda to boiling on stove. Add to second package of unflavored gelatin mix in small bowl and stir until completely dissolved. Stir in .5 cup vodka. Spoon over milk layer in cups. Refrigerate 1 hour or until firm. Top each shot with whipped topping and candy corn.
